4 very ripe bananas
1 cup sugar
1/2 cup butter or margarine
1/2 tsp vanilla extract
1 1/2 cups all purpose flour
1/2 tsp salt
1 tsp baking soda
preheat oven to 350 degrees
mix butter and sugar until even.
add eggs to butter/sugar. stir until smooth.
mix flour, baking soda, and salt.
dump bananas into eggs/butter/sugar. add vanilla. mix well.
add flour mix to everything else.
stir until smooth.
grease a loaf pan.
pour in batter.
bake 50-60 minutes at 350. let cool a bit. Eat.
(1) I tried this in a convection oven. I do not recommend this option. 350 was MUCH too hot (top and sides cooked before middle). I turned it down to 250 and checked frequently for done-ness.
(2) I made this recipe increased twelve fold! I used 48 bananas, two dozen eggs, 3 lbs of "I can't believe its not butter", 12 cups of sugar, 6 tsp of vanilla extract, 4 TBS of baking soda, 2 TBS of salt, and a whole 5 lb bag of flour! I used five large pans and IT TURNED OUT GREAT. You need VERY LARGE BOWLS to attempt to mix this!
